Key Lime Pie and Other Green Things

Today at Life as Mom we are sharing St. Patrick's day recipes. Now I have never really made anything special foodwise for St. Patrick's day.  But we do celebrate it (see below).  This year I decided I would make a Key Lime Pie for it. Why Key Lime Pie? Because it's green!  Ok, it isn't really green, but it comes from something green!  Besides, I have a son who adores citrus. So here is the yummy recipe!

Key Lime Pie

Mix one can sweetened condensed milk, one large container Cool Whip, and one small can limeade with a whisk. Add bottled (or fresh) key lime juice to taste.
Spoon into a graham cracker crusts. Refrigerate or freeze. Makes two pies.
Note: I ended up using a 14oz can sweetened condensed milk, a 16 oz container of Cool Whip and a 12 oz can of limeade (because I couldn't find the 6 oz can).  This worked wonderfully!

This is normally how we celebrate St. Patrick's Day here. We always have a night visitor. We can always tell where he has been, and he leaves little goodies behind...a pot of gold here...some Lucky Charms there. Last year he even left "fortune cookies" (he must have been traveling in the Orient!).
