2012 Pantry Challenge

I have decided to do something new that I have never done before.  I am going to take a "pantry challenge" for the month on January. What is a pantry challenge? It is a concerted effort to eat meals/foods from what you already have in the pantry.  Does that mean that I won't be going to the grocery store during the month of January? Hardly!  But we are going to try to make an effort to eat a lot of what we already have on hand and to use up some cans of stuff that have been sitting around for awhile.

I am starting the month well-stocked when it comes to freezer meals.  This is what I have in my freezer already:
Stirfry
Chicken rolls and mashed potatoes
Shepherd's pie
Crockpot mac-n-cheese
Chili beans and cornbread
Fried rice
Jambalaya
Chicken and rice casserole
Marinated chicken strips with rice
Meatloaf
Chicken dumplings
Goulash
Noodle Bake
Hamburger and potato skillet dish

One of the things I would like to use a bit more is the numerous bags of berries that are taking up freezer space and the numerous cans of pumpkin sitting on the shelf.

My whole goal in this is to cut down on our food budget for the month of January. I am going to allow myself to go to the store for produce, flour, sugar, and dairy products to supplement.  I am really hoping to cut our food budget by at least $100 if not more.  Since I have never done this before I am not sure what to expect.

sounds like you have some great stuff in your freezer! I'll be cleaning out my freezers as well this month. Good luck.
