Here are the meals we cooked for the month of March...

Mango Chicken with Plum Sauce
Jambalaya
Black Bean and Pumpkin Chili (Scroll down)
Lasagna

Tex Mex Beans and Rice
1 15 oz. can black beans
1 1/4 cups brown rice
1 cup frozen corn
1/2 cup salsa
1 jalapeño chili, minced
4 garlic cloves, minced
1/2 t. salt
1/8 t. pepper
2 cups boiling water
2 T. lime juice
1/4 cup chopped cilantro

We combined the first 8 ingredients and then froze this mixture.  To cook and serve: Thaw. Put mixture in the crockpot with 2 cups boiling water. Cook on low for 2 to 3 hours until rice is tender. Stir in lime juice and cilantro.  Serve.
