Breakfast from Homemade Mixes

In an effort to keep breakfast easy I have tried to collect recipes that cut my cooking time in the morning.  Making breakfast from mixes can help with this!  Sometimes I even make these items the night before so that there is NO work in the morning.

Oatmeal Pancake Mix
4 cups quick cooking oats
2 cups white flour
2 cups whole wheat flour
1 cup packed brown sugar
1 cup powdered milk
3 T. baking powder
2 T. cinnamon
5 t. salt
1/2 t. cream of tartar
In a large container combine all the ingredients.  Store in the fridge.  Makes 4 batches of pancakes.

To Make Pancakes:
2 eggs
1/3 cup oil
2 cups pancake mix
1 cup water
Mix well and pour by 1/4 cupfuls on a greased griddle.  Yield: 10 pancakes per batch.


This is for a quart jar to give as a gift, but I have made this in bulk to use.  If you have a cheap/free source of blueberries like I do (we pick ours out in the wild!) then you could omit the dried blueberries and add some fresh or frozen ones when you make the scones.  You could also change the berries to your favorite kind.

Snack Cake Mix
These are supposed to be cake, but I reduce the sugar a bit and add healthy ingredients for breakfast cake.  It has to be better for you than a doughnut!

8 3/4 cups all-purpose flour
2 T. baking powder
1 T. salt
5 cups sugar (I reduce this)
Mix all ingredients well. Divide into six 2 and 1/3 cup portions.  Put portions in ziploc baggies.  Use within 12 months.

Here are some cakes that you can make with the above mix. You can mix these in the pan you bake them in! Less clean up!

Applesauce or Pumpkin Cake
1 pkg. cake mix
1 egg
1/3 oil
3/4 cup applesauce or pureed pumpkin
1 1/2 t. cinnamon
1/2 t. allspice
1/8 t. cloves
1 cup raisin (optional)
Pour cake mix into an ungreased 8 or 9" pan. Set aside. In a small bowl, combine the rest of the ingredients except the raisins and beat with a fork. Stir into cake mix.  Add the raisins and mix. Bake at 350 for 35 to 45 minutes.

Banana Cake
1 pkg. cake mix
1 egg
1/3 cup oil
1/2 cup mashed banana
1/2 cup milk
1/2 cup chopped nuts (optional)
Combine all ingredients in an ungreased 8 or 9" pan beating with a fork to blend. Bake at 350 for 30 to 45 min.

Oatmeal Spice Cake
1 pkg. cake mix
1 1/4 cup boiling water
3/4 cup oats
1 egg
1/3 cup oil
1 t. cinnamon
1/2 t. nutmeg
1 t. vanilla
1/2 cup raisins (optional)
Pour oats in a small bowl. Stir in water and set aside. Combine all remaining ingredients except raisins in a 8 or 9" pan.  Stir in raisins and oats blending well. Bake at 325 for 45 minutes.
