Sandwich Rolls (Bring Subway to your Door)

Ok, maybe it isn't Subway, but they are good!  Last week Noah had a bunch of friends over and I decided that serving them dinner was best done if they did it! LOL So I laid out sandwich fixings and let them have at it.  Instead of buying bread I decided to make sandwich rolls...some had shredded cheddar in them and the others had parmesan cheese and Italian herbs.



These were pretty easy to make.  I just used my favorite bread dough recipe and added the cheeses and spices.  I allowed the dough to rise once. I formed the dough into sandwich rolls and let them rise.  Finally I baked them at 375 for about 20 minutes.

EZ Bread Dough
2 1/4 cups warm water
4 tsp. yeast
4 T. sugar
6 cups flour
2 T. vital wheat gluten (I find this in the health food section of my grocery store)
2 t. salt
4 T. dry milk
3 T. oil
1/2 cup potato flakes
Add the ingredients in the order listed into a mixer bowl (KitchenAide) with a dough hook attachment and mix on low for 10 minutes. Or mix it in the dough cycle of your bread machine.

I tried these Debbie and unfortunately mine do not look like yours. Mine were a bit heavier than I like in a roll. I will be giving it another go though. I do have a couple of questions. How many rolls does the recipe make and I am guessing that is a half a cup of potato flakes? Thanks!

Michele- I am sorry that they didn't work out. I can't remember how many rolls they made, but I made rolls that were about 5 or 6 inches long. Do you have a Kitchen Aide? Because mixing for 10 minutes really does help. And yes, it is a 1/2 cup of potato flakes. I have made that correction.

I have a feeling that because they are homemade they may not turn out quite as light as the ones from Subway...but the mixing and making sure they rise enough should help.

Can you freeze them and how do you unthaw them then?

If you wrap them in plastic wrap and put them in Ziplocs you can freeze them. I would just let them thaw on the counter.
