Meatballs Galore

Meatballs can be a great starter to any meal.  You can make a ton of them and then freeze them for future dinners.  Here is the recipe I use to make a huge batch of meatballs (about 120 of them!).


Meatballs
6 lbs ground beef
3-4 cups bread crumbs
2/3 cup milk
4 eggs, lightly beaten
1/4 cup minced onion
2 T. minced garlic
1 T. salt
2 t. black pepper
Preheat the oven to 500 degrees.  Using your hands (Gross! I know!) thoroughly combine all the above ingredients. Shape into one inch balls. Place on baking sheets and bake for 15-20 minutes.

Spaghetti and meatballs

Sweet and Sour meatballs
{Sweet and sour sauce with onion, bell pepper and pineapple over the meatballs.  Serve over rice.}




Polynesian Meatballs
1/2 cup of BBQ Sauce
1 (20 oz) can of diced pineapple in the juice
2 cups of chopped green pepper
1 (12.5 oz)  package of frozen meatballs
brown rice or pasta to serve it on

Mix the BBQ sauce and pineapple chunks with the juice in a large skillet. Bring to a boil. Make sure to stir it often so it doesn't stick.  Stir in the peppers and meatballs. Simmer on low for about 15 minutes or until your meatballs are heated through and the peppers are tender crisp. Sauce will thicken.

Serve it over your favorite brown rice or pasta.
