Last fall I did a series of posts on recipes that contained certain ingredients.  See these links...

Well, in April I am going to start some posts for more recipes based on an ingredient. I like having recipes grouped this way because then you can eat seasonally.  You might be interested in this cookbook...













All the recipes are categorized by the four seasons and their ingredients are highlighted...so for example in the summer section you can find rhubarb recipes.  In the winter section you can find recipes with root vegetables.

While I love this cookbook, I am not going to be sharing any of the recipes from there.  I am going to be posting recipes that we have used over the years that we have enjoyed.  These are the posts that I plan to do...

Search & Win

Are you familiar with Swagbucks?  I have been hearing about them for awhile, but never signed up.  A few weeks ago I took the plunge and did.  Basically, Swagbucks is a program in which you earn points for internet searches (at least that is the main way that I am earning them).  Those points can be redeemed for things like Amazon gift cards.  You can also earn points by shopping online and referring a friend.  Personally, my whole goal is to earn some gift cards so that I can feed my obssession for books!  But Amazon has so many other things (even food!) that the gift cards could be used for. In about two weeks I have earned enough points for a $5 gift card (450 points or Swagbucks).  Not bad! Not that I am going to get rich from it, but it is nice to have a little extra to spend.

With the tough economy lately every little bit helps.  So many people are penny pinching nowadays. I have basically changed the way I go to websites now.  I have the Swagbucks toolbar that has a search window.  I tend to use the toolbar to do searches and to even go to the websites I visit often.  Sometimes the searches result in getting Swagbucks and sometimes not.  When I do win some Swagbucks it is normally 10 of them.  But there have been a few times I have earned 20 for one search.

We had a great week especially since all the snow is starting to melt!  Here in central Alaska we can have snow from October through April...and sometimes even into May.  It is great to see the sun again and to start to get a glimpse of bare ground.

We recently started a new read aloud, The Eagle of the Ninth...we will see how it goes...the first chapter was hard to get through simply because the book is set in Roman times and has a plethora of long Latin names!


On Friday, we are going over to a friend's house to make beeswax candles.  She raises bees so we have seen the whole process before (hiving, the building of the cells, producing honey, extracting it, etc.).  Now we get to work with the wax they produce.
Titan (our 11 month old mini schnauzer) got a chance to meet his baby uncle! Here is the story for how this came to be. Titan spent the night at Uncle Aurik's house on Wednesday.  We were told he was a "perfect, little angel" to his tiny relative! He did, however, have to teach Aurik "his place" a few times when Aurik became to excited in his playing.  This is interesting considering that Titan has only had exposure to older dogs...this was his first opportunity to be the "teacher" and "leader" to a pup younger than him.

As many of you know, PRAYER, is my Word of the Year.  One of my biggest quandries is why sometimes God remains silent in response to our prayers...


Sometimes our prayers go "unanswered" or rather we get a "no" or a "wait" answer from God.  Many times the reason has to do with that God's timing is different from ours...He is working out His perfect plan which may not be on our timetable.

Then there are other times...

in which God doesn't answer because there is something that we need to deal with.  Many of the below ideas come from the book, Too Busy Not to Pray.  So here are some prayer problems that we might have...

1. Your iniquities have separated you from your God; your sins have hidden his face from you, so that he will not hear. Isaiah 59:2  Plain, ole sin may be the culprit to why God seems not to answer.  By confessing them to Him and whoever else we have offended, we can then open up the "prayer lines".

2. If you are offering your gift at the altar and there remember that your brother has something against you, leave your gift there in front of the altar. First go and be reconciled to your brother; then come and offer your gift. Matthew 5:23-24  This one verse has really played out in my life.  I have had two major relationships in my life that haven't been reconciled because the other person refuses to make it right.  So I have made it my life goal to reconcile with those that hold things against me.  I go so far as to even apologize for hurts that may not have been totally my fault.  Now, you may think that is a little odd...but sometimes we hurt others even when we are doing the right thing (like moving away from a relationship that is unhealthy).  If I find out that a person is holding a grudge against me for something like that I will go to them and acknowledge the pain.

3. When you ask you do not receive, because you ask with wrong motives, that you may spend what you get on your pleasures. James 4:3 Sometimes our motives for asking things in prayer are just plain selfish.  God is not always going to answer those prayers in the affirmative.  Our hearts are so deceptive that we ourselves don't see the selfishness in our requests.  There has been many a time that I have had to ask God to show me my selfish side.

4. If you close your ear to the cry of the poor, you will cry out and not be heard. Proverbs 21:13 God is not going to show us compassion if we don't show it to others! We need to be willing to reach out to others in their tough situations.

5. If any of you is lacking in wisdom, ask God, who gives to all generously and ungrudgingly, and it will be given to you. But ask in faith, never doubting, for the one who doubts is like a wave of the sea, driven and tossed by the wind; for the doubter, being double-minded and unstable in every way, must no expect to receive anything from the Lord. James 1:5-8 Sometimes it is just a plain lack of faith! We can't see around the problem...it is too big and when we turn our eyes off God, He becomes too small to deal with it.

So I ask myself, "What is blocking my prayers?" "Where does the problem lie?"

This is my first review for Book Sneeze. I am so excited!


I was provided a copy of The Chronological Guide to the Bible from Thomas Nelson Publishing to review. This book is a reference guide to the Bible and will work with any translation.

Here are some of the features of the book:
*Nine epochs of history that all the books of the Bible are divided into.
*A summary for each book of the Bible.
*A chronological reading guide
*Maps
*Cultural, historical, and archeological information for each time period.
*Explanations of Biblical practices
*Timelines

I thought that this book is well put together and a great reference tool! There is so much background information packed into the guide! It is a great resource for someone studying a certain book or wanting an overview of the Bible. I will be using it as a reference guide with my kids as we read different passages. The one downside to this guide is the price. It retails for $24.99 in paperback form. There a little over 200 pages so that is quite pricey for the size of the book.

Botany on the Wild Side...

Noah is studying botany this year with Apologia.  So when I saw these kits to grow carnivorous plants, I thought, "Why not!" There were two seed packets...one to plant now and the other has to have water added and then it is put in the fridge.  We will be able to plant the second pack in 6 weeks (on Titan's birthday)!  These plants are slow growers so we will see what happens.  Hopefully, we will end up with something!  I told the boys that this is all one big experiment, but if it works we could have Venus Flytraps, Sundews, and Pitcher plants.  We will see!

Veni, Vidi, Vici...

"I came, I saw, I conquered."  This week was all about Julius Caesar as he was the next part of our history studies (Biblioplan). It was good timing as the Ides (15th) of March was on Monday and we were studying Julius' murder which happened on that date.  Did I plan it this way? No!  It was a God thing...the timing just came together.  History became more real to the boys because we were studying Julius Caesar's life on the anniversary of his death.

For science this week we had several experiments to work on.  Zach is doing Apologia's General Sciene and Noah is doing Apologia's botany.  Here are a few photos... 
Noah is planting some herb seeds (basil, lemon balm, and chamomile) to watch them grow and eventually to add them to soap.
Here is Zach running from his experiment!  He was sure that the balloon was going to explode as it was filling up with gas.  How come he was so sure?  Because we have a track record for doing this!  The last time we did an experiment with a balloon and a soda bottle we had an explosion and a mess! I am delighted to report that Zach's fears were unfounded! No explosions this week!

Bulk Cooking for March

Here are the meals we cooked for the month of March...

Mango Chicken with Plum Sauce
Jambalaya
Black Bean and Pumpkin Chili (Scroll down)
Lasagna

Tex Mex Beans and Rice
1 15 oz. can black beans
1 1/4 cups brown rice
1 cup frozen corn
1/2 cup salsa
1 jalapeño chili, minced
4 garlic cloves, minced
1/2 t. salt
1/8 t. pepper
2 cups boiling water
2 T. lime juice
1/4 cup chopped cilantro

We combined the first 8 ingredients and then froze this mixture.  To cook and serve: Thaw. Put mixture in the crockpot with 2 cups boiling water. Cook on low for 2 to 3 hours until rice is tender. Stir in lime juice and cilantro.  Serve.

Coconut Oil Fudge

We made fudge from coconut oil! This recipe is actually very yummy!  I didn't think it would work, but it did.  And I have to admit that it was a lot easier than making regular fudge.  It is still going to be high in calories, but a little healthier because of the coconut oil.  Check out the Passionate Homemaking blog for the recipe!


His Rejection is our Salvation!

 He had no beauty or majesty to attract us to him, nothing in his appearance that we would desire him.  He was despised and rejected by men, a man of sorrows, and familiar with suffering. Like one from whom men hide their faces he was despised, and we esteemed him not.  Isaiah 53:2-3

Bonnie over at Faith Barista asked her readers if we would be real and post about rejection.  Wow, what a hard topic!  One that maybe hits too close to home for many of us...one that we would rather not think about.

My biggest battle with rejection comes in the form of abuse that I endured from a family member. When you are abused the whole goal of the abuser is to get you to be someone or do something that he or she wants you to do or be.  You ARE NOT accepted for who you are, and in many cases you will never be good enough for the abuser to accept you with open arms. In my case, not only did I feel rejected by the person that abused me, but also by God.  You see my abuser used God against me. (See this post.) So deep down inside I always felt like I wasn't good enough for God either.  I have spent a huge portion of my life trying to live up to what God and others wanted me to be.   But as we all know, we can't please everyone! For me, struggling to be accepted by God and others only led to deep, clinical depression.  I have since come out of that pit, but not without a fight.

God has shown me in the last few years that He doesn't reject me.  Regardless of what He allows in my life, I am loved and accepted by Him.  He has also brought me to the realization that He suffered rejection so that we wouldn't have to.  He was rejected by men enough to be put on a cross.  His rejection is our salvation! I know that I will never be rejected by Him even if I am rejected by others.  The irony is that in His rejection we can receive salvation, but only if we don't reject Him! Our acceptance of Him seals our fate...not our good works, good looks, or good thoughts and intentions.  All we have to do is accept Him...end of story... to create the ending to our story!

Freezer Breakfast Ideas

These are my favorite types of breakfasts!!!  They are totally prepared and then frozen....all I have to do is thaw and heat up in the microwave if necessary.

I don't think that most muffins freeze well...just my opinion.  But these do!  I make them in bulk (at least double the recipe) and freeze them in Ziplocs.

This was originally called Sour Cream Banana Berry Bread.  We call it cran-ban bread in our home.


Biscuits you make, but don't cook.  Freeze them and pop them in the oven in the morning!

Cornmeal Waffles
I love this recipe!  These make hearty waffles that you can pour syrup over for breakfast...or you can use them for a Mexican meal for dinner!  Top them with beans, taco meat, tomatoes, lettuce, cheese, sour cream...you name it!

2 cups flour
2 cups cornmeal
2 T. baking powder
1 t. salt
1 1/2 cups oil ( you can reduce this a bit)
2 eggs
Enough milk to make a thin batter
Fry the batter in a waffle iron.

Breakfast Burritos
I don't really have a recipe for these.  Basically, I saute chopped onions and bell peppers and then scramble some eggs in the veggies.  You can then add chopped cooked bacon or cooked, crumbled sausage to this "scramble".  I then take flour tortillas and put some of the egg mixture in them.  I sprinkle some grated cheese over the mixtures and then fold up the tortillas so that the filling won't come out.  I freeze the burritos on trays and then put them in baggies.  All you need to do is microwave them in the morning!

Other items that you can make in bulk and that freeze well...Just use your favorite recipe!

Overnight Breakfasts

Here is the second post with ideas to make breakfast easy in the morning.  Sometimes I do "overnight breakfasts" meaning everything is mixed together or put together and all I have to do in the morning is bake whatever I am making.  Here are a few recipes we have used over the years.

Overnight Coffeecake

sift together:
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon

Cream together:
1/2 cup brown sugar
1/2 cup granulated sugar
2/3 cup shortening

Add in:
2 eggs
1 tsp. butter flavoring
1 tsp. vanilla

Mix together. Blend with the flour mixture plus
1 cup buttermilk
(OR 1 cup milk and 1 Tbsp. vinegar or lemon juice)

Spread in greased 9x13 pan.
Sprinnkle with Topping:

1/2 cup brown sugar
1 Tbsp. flour
1/2 tsp. cinnamon
1/4 tsp. allspice
1 Tbsp. hard butter (cut in small pieces)

Cover. Refrigerate overnight. In morning, uncover and bake at 350 degrees for 25 minutes.

French Toast Casserole


1 1lb. loaf Italian bread
8 oz. cream cheese
1/2 cup sugar
1/2 tsp. vanilla
1/2 cup chopped pecans
4 eggs
2 cups milk
1 tsp. cinnamon
2 TBS. melted butter

Cut bread into 1 inch cubes. Place half (about 7 cups) in greased 9 X 13 pan. Place cream cheese in microwavable bowl. Cover and cook on HIGH 30 seconds. Stir, recover and cook 2 more minutes.(It should be completely melted.) Stir 1/2 of sugar and all the vanilla into melted cheese. Spoon over bread. Sprinklw with nuts. Top with remaining bread. In a bowl, beat together remaining sugar, eggs, milk, cinnamon and butter. Pour over bread. Bake 35 minutes at 350* or Cover pan and freeze or refrigerate (don't keep in fridge more than 12 hours, though.) Allow casserole to sit at least 5 minutes before cutting. Serve with syrup or fruit topping. Serves 6 to 8.


Sourdough Pancakes
Now, you need to expect that with me living in Alaska that you are going to get at least one sourdough recipe! This is not true sourdough, but it sure does taste like it! You need to start this early enough so that it has time to sit in the fridge.

1 3/4 cup milk
1/4 cup warm water
2 T. sugar
1 pkg. yeast
3 large eggs
1/4 cup oil
1 t. salt
2 cups flour

Heat milk until very hot. Mix water, sugar, and yeast in a large bowl. Let stand 5 minutes. Add eggs, oil, and salt to years mixture.  Blend well.  Whisk in hot milk and then the flour. Cover and let stand for 1 1/2 hours at room temperature. Stir batter to deflate it. Cover and refrigerate for 12 to 48 hours.  Stir batter before making pancakes.

Breakfast from Homemade Mixes

In an effort to keep breakfast easy I have tried to collect recipes that cut my cooking time in the morning.  Making breakfast from mixes can help with this!  Sometimes I even make these items the night before so that there is NO work in the morning.

Oatmeal Pancake Mix
4 cups quick cooking oats
2 cups white flour
2 cups whole wheat flour
1 cup packed brown sugar
1 cup powdered milk
3 T. baking powder
2 T. cinnamon
5 t. salt
1/2 t. cream of tartar
In a large container combine all the ingredients.  Store in the fridge.  Makes 4 batches of pancakes.

To Make Pancakes:
2 eggs
1/3 cup oil
2 cups pancake mix
1 cup water
Mix well and pour by 1/4 cupfuls on a greased griddle.  Yield: 10 pancakes per batch.


This is for a quart jar to give as a gift, but I have made this in bulk to use.  If you have a cheap/free source of blueberries like I do (we pick ours out in the wild!) then you could omit the dried blueberries and add some fresh or frozen ones when you make the scones.  You could also change the berries to your favorite kind.

Snack Cake Mix
These are supposed to be cake, but I reduce the sugar a bit and add healthy ingredients for breakfast cake.  It has to be better for you than a doughnut!

8 3/4 cups all-purpose flour
2 T. baking powder
1 T. salt
5 cups sugar (I reduce this)
Mix all ingredients well. Divide into six 2 and 1/3 cup portions.  Put portions in ziploc baggies.  Use within 12 months.

Here are some cakes that you can make with the above mix. You can mix these in the pan you bake them in! Less clean up!

Applesauce or Pumpkin Cake
1 pkg. cake mix
1 egg
1/3 oil
3/4 cup applesauce or pureed pumpkin
1 1/2 t. cinnamon
1/2 t. allspice
1/8 t. cloves
1 cup raisin (optional)
Pour cake mix into an ungreased 8 or 9" pan. Set aside. In a small bowl, combine the rest of the ingredients except the raisins and beat with a fork. Stir into cake mix.  Add the raisins and mix. Bake at 350 for 35 to 45 minutes.

Banana Cake
1 pkg. cake mix
1 egg
1/3 cup oil
1/2 cup mashed banana
1/2 cup milk
1/2 cup chopped nuts (optional)
Combine all ingredients in an ungreased 8 or 9" pan beating with a fork to blend. Bake at 350 for 30 to 45 min.

Oatmeal Spice Cake
1 pkg. cake mix
1 1/4 cup boiling water
3/4 cup oats
1 egg
1/3 cup oil
1 t. cinnamon
1/2 t. nutmeg
1 t. vanilla
1/2 cup raisins (optional)
Pour oats in a small bowl. Stir in water and set aside. Combine all remaining ingredients except raisins in a 8 or 9" pan.  Stir in raisins and oats blending well. Bake at 325 for 45 minutes.
